A cutie pie and a scoop of ice cream walk into a bar… the end. Well, not really. There is a lot of ice cream eating going on at our house these hot summer days (and most every day of the year), so we decided to partner our love for pie and ice cream to create a…PiesCream Sandwich. My husband masterminded this combo as his favorite food groups are: pie and ice cream. The flaky tender, slightly salty, not to sweet, cinnamon coated pie crust meets the sweet, creamy, smooth ice cream and it is a true match made in heaven. I, personally, like them better than a traditional cookie ice cream sandwich since these are less sweet and I don’t fall into a slumber sugar coma after enjoying. If you like pie crust and ice cream I encourage you to get on this sweet treat train. The best part is they are customizable. You can use any favorite ice cream flavors- endless possibilities! Next time, I think I will go fruity and try blueberry and peach ice cream? This pie crust is also vegan and if your diet is non dairy- fill the pies with any dairy-free ice cream alternative. One more thing, make a double batch and save them in your freezer for any time you feel like a little something special. I promise they won’t last long.

Give a double tap if you are with me on these!
