It’s Pie Time! 

What do you think of a pie crust ice cream sandwich? Let me answer that, it is delicious! 

A cutie pie and a scoop of ice cream walk into a bar… the end. Well, not really. There is always a lot of ice cream eating going on at our house , so we decided to partner our love for pie and ice cream to create a…PiesCream Sandwich. My husband masterminded this combo as his favorite food groups are: pie and ice cream. The flaky tender, slightly salty, not to sweet, cinnamon coated pie crust meets the sweet, creamy, smooth ice cream and it is a true match made in heaven. I personally like them better than a traditional cookie ice cream sandwich since these are less sweet and I don’t fall into a slumber sugar coma after enjoying. If you like pie crust and ice cream I encourage you to get on this sweet treat train. The best part is they are customizable. You can use any favorite ice cream flavors- endless possibilities! Next time, I think I will go fruity and try blueberry and peach ice cream? This pie crust is also vegan and if your diet is non dairy- fill the pies with any dairy-free ice cream alternative. One more thing, make a double batch and save them in your freezer for any time you feel like a little something special. I promise they won’t last long.

Add your favorite ice cream and make an Ice Cream Sandwich with Pie crust dough!

 

These are a cute and fun way to use pie dough! They are a great alternative to an cookie based ice cream sandwich.

If you are baking pies and have extra dough, save it, and make these delicious treats! 

Ingredients

1 recipe of Grandma Rhea’s Pie Crust

1 pint of Alden’s vanilla ice cream (or flavor of your choice)

1 pint of Alden’s chocolate chunk ice cream (or flavor of your choice)

Cinnamon sugar (5 tablespoons sugar and 1 tablespoon of cinnamon)

Plastic Wrap for sealing the ice cream sandwiches

Instructions

Baking Pies:

  1. Preheat oven to 375 degress F
  2. Line a 9X13 in cookie sheet with parchment paper, set aside
  3. Make cinnamon sugar by mixing the two ingredients in a small bowl until well combined, set aside
  4. Make pie dough according to recipe directions
  5. After rolling out the pie dough make 12 even rounds using a 3 inch cookie cutter
  6. Place the cookie shapes on the parchment lined cookie sheet
  7. Sprinkle each cookie with cinnamon sugar mixture (you may have extra)
  8. Bake pies for 15 minutes until golden brown
  9. Place pies rounds on a cooling rack until they are completely cooled (about 15-20 minutes)
  10. Get ice cream out of the freezer and let it sit out for about 10 minutes until slightly soft

Assembling the Ice Cream Sandwiches:

  1. Take one pie round and gently press ice cream about 1 inch high then cover with the other pie round. DO NOT PRESS HARD as the pie shells are flaky and tender
  2. Gently wrap each individual PiesCream Sandwich in plastic wrap and freeze at least 2 hours before serving
  3. As soon as you finish assembling each one place in the freezer so they aren’t melting as you prepare the others
