Sharing my fave dipping oil today. It’s at the center of the table for all my dinner parties. I place it in a medium flat bowl and surround it with hot chunks of crusty bread. I leave it there all night and the grazers even go dipping in it after dessert! After you try it you’ll do the same.
I could eat Italian food everyday (let’s be honest- I do).
Why?
For me, it’s the simplicity of the ingredients. My heart sings when I see raw tomatoes, fresh basil, garlic, good olive oil, and fresh bread. Most Italian recipes begin and end with a good olive oil- one of my faves for cooking and tasting right out of the bottle is- Colavita first cold pressed. It’s a perfect balance between fruity and spicy with the most delicate flavor. This oil is the start of sautéing my onions for my Sugo al Pomodoro (classic tomato sauce) and the last drizzle on my Panzanella Stuffed Mozzarella Salad. Let it be yours too!

Ingredients
- 3/4 cup extra virgin olive oil (I suggest Colavita brand)
- 1/4 cup balsamic vinegar (good quality variety from Modena Italy)
- 2 cloves garlic, cut in quarters
- 3 tablespoons fresh oregano, minced
- 1 tablespoon of fresh rosemary, minced
- 3 tablespoons fresh basil, minced
- Coarse sea salt + black pepper to taste
- 1 baguette/ ciabatta/ sourdough boule
Instructions
1- Mix all ingredients in a bowl and let marinate at least one hour before serving
Enjoy with delicious bread of your choice!

I like a bit more vinegar, but it was still so good. I served it to my family and the little ones were even dipping and loving it. I will definitely make this again.
